Recipes from the Bair House

When Deb and I got married on September 20, 1980, Jonita Hardy compiled for us a cookbook of family favorite recipes subtitled The Theory of Relativity. It contains everything from "Applesauce cake" to "Zuccini bread" and we have cherished it for the past 15 years. I want to take this opportunity to thank each person that contributed to the cause and share with you some of our favorite dishes.

Deb's Mom's 30 Minute Chili

This is the chili recipe that I use for the Paynesville Christian Church's annual chili supper. It's not really all that hot when prepared by this recipe, but it is by far the hottest chili served out there.

Ingredients

  • 1 lb. ground beef
  • 1 cup chopped onions
  • 2 14-1/2 oz. cans tomatoes
  • 1 8 oz can tomatoe sauce
  • 15 oz can kidney beans
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1-2 Tbsp. chili powder
  • 2 tsp. sugar
In large skillet
Brown: 1 lb. ground beef

1 cup chopped onion. Drain.
Stir in: 2 14-1/2 oz cans tomatoes & juice

1 8 oz can tomatoe sauce

1 15-1/2 oz can kidney beans

1 tsp. salt

1/4 tsp pepper

1-2 Tbsp. chili powder

2 tsp sugar
Break up tomatoes. Heat to boiling. Reduce heat; simmer uncovered, 30 minutes to blend flavors.

Deb's Mom's Souperburgers

You may know this dish as Sloppy Joes or Peppy Burgers (or some variation thereof). My nephew, Daniel says that the part you fix here is the slop and that the bun is the E-Joe part.

Ingredients

  • 1 lb. ground beef
  • 1/2 cup diced onions
  • 2 Tbsp. catsup
  • 1 Tbsp mustard
  • 1 can Chicken Gumbo soup (undiluted)
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
Combine meat, salt, pepper, and onion in skillet; stir until meat has lost it's red color. (I usually drain meat at this point). Add catsup and mustard; mix well. Add soup and sprinkle with sugar.
Simmer 15 minutes.
Serve on buns or rye bread.

Deb's Old Settler Beans

Everybody asks for the recipe to Deb's Old Settler Beans. Now you can fix these pot luck supper treats for yourself.

Ingredients

  • 1/2 lb. ground beef (more for meatier beans)
  • 1/4 lb. bacon (or a little more)
  • 1 small onion
  • 1 can kidney beans
  • 1 can pork and beans
  • 1 can butterbeans
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup catsup
  • 1/2 tsp. dry mustard
  • 2 Tbsp. molasses
Brown ground beef, diced onion, and bacon. Drain. Put in large baking dish. Don't drain the beans. Add remaining ingredients. Mix it up and bake at 325 degrees for 1-1/2 hr. or 350 degrees for 1 hr.
